Okra Ladies Fingers (Bhindi Bhaji) Recipe - Serves 4
 
Ingredients
500g (1 lb) okra
2 finely chopped medium onions
1/4 teaspoon (1ml) garlic powder
1/4 teaspoon (1ml) coriander powder
1/8 teaspoon (0.5ml) cumin powder
3 finely chopped large tomatoes
2 tablespoons (30ml) oil
2 tablespoons finely chopped fresh coriander leaves
Method
Wash the okra and cut offs the ends
Heat the oil in a pan over medium heat
Add the onion and cook for 3 minutes, stirring often
Add the garlic, coriander and cumin powder and stir-fry for 3 more minutes
Add the okra and cook for 8 minutes, stirring often
Put the okra into a serving dish and garnish with the tomato and the fresh coriander
Serve hot
