Beef and Onion Curry Recipe

Ingredients

1kg (2 lb) stewing beef
6 dried hot red chillies
2 stalks of fresh lemon grass (cut off the straw-like tops)
3 large onions, peeled and finely sliced
10 tablespoons (150ml or 5 fl oz) vegetable oil
5cm (2 inch) cinnamon stick
2 tablespoons (30ml) lemon juice
1 tablespoon (15ml) sugar


Method

Remove any excess fat from the beef and cut it up into 2.5 cm (1 inch) cubes
Put 4 tablespoons (60ml) of hot water into a small bowl, crumble the dried chillies into the water and leave for 30 minutes
Put the chillies and liquid into a food processor and process into a smooth paste
Lightly crush the bottom of the lemon grass stalks
Heat the oil in a large frying pan (you need one with a lid) over a medium to high heat
Stir-fry half of the onions for 5 minutes
Turn the heat down to medium and fry for another 10-15 minutes, stirring often, until the onion is well browned and crispy
Remove the onion from the pan and put onto a couple of sheets of kitchen roll on a plate
Return the frying pan to the heat (it will still have vegetable oil in it)
Add the chilli paste that you made to the frying pan and stir-fry for 30 seconds
Add the rest of the onion and stir-fry for 8 minutes, until the onion is soft
Add the beef, cinnamon stick, lemon juice, sugar, lemon grass and 900ml (32 fl oz) of cold water
Bring to the boil
Cover the frying pan, reduce the heat and simmer for 90 minutes, stirring now and again
Remove the lid, turn up the heat to high and cook for 10 minutes until the sauce thickens, stirring often
Add the previously cooked onion, mix well and cook for 3 minutes, stirring often to stop the curry from sticking as the sauce thickens
Remove the cinnamon stick and lemon grass
Serve hot on rice
