Pulao Rice Recipe - Serves 2
 
Ingredients
1 tablespoon (15ml) vegetable oil
2 green cardamoms
2 cloves
2.5cm (1 inch) stick of cinnamon
1/4 teaspoon (1ml) cumin seeds
1 small onion, peeled and thinly sliced
200g (7 oz) basmati rice
1/4 teaspoon (1ml) salt
500ml (18 fl oz) hot water
Method
Heat the oil in a medium/large saucepan over a medium to high heat
Add the cardamoms, cloves, cinnamon and cumin seeds and stir-fry for 5 seconds
Add the onion and stir-fry for 5 minutes
Add the rice and salt and stir-fry for 30 seconds
Add the hot water, reduce the heat to simmer, cover the pan and simmer for 8 minutes until the rice is cooked - do not remove the lid whilst the rice is cooking
Serve hot
