Vegetable Pulao Recipe - Serves 4

Ingredients
2 tablespoons (30ml) vegetable oil
1 green cardamom
2.5cm (1 inch) stick of cinnamon
2 cloves
2 black peppercorns
1 medium onion, peeled and finely sliced
300g (10 oz) frozen mixed vegetables, defrosted
1/4 teaspoon (1 ml) salt
1/4 teaspoon (1 ml) ground cumin
300g (10 oz) basmati rice, rinsed
600ml (1 pint) boiling water
Method
Heat the oil in a medium saucepan over a medium heat (you need a saucepan with a lid)
Add the green cardamom, cinnamon, cloves and peppercorns and stir-fry for 1 minute
Add the onion and stir-fry for 5 minutes
Reduce the heat slightly and add the vegetables and the salt and fry for 5 minutes
Add the cumin and basmati rice and mix well
Add the boiling water, reduce the heat to simmer, cover and simmer for 10 minutes, without removing the lid, until the rice is cooked
Serve hot
