Lemon Rice Recipe - Serves 2-3

Lemon Rice Recipe

From 302 to 453 calories each serving


1 cup (200g or 8 oz) basmati rice
12g cashew nuts (about 8 nuts)
1/4 teaspoon (1ml) turmeric powder
1 tablespoon (15ml) oil
1 green chilli, finely chopped
1/4 teaspoon (1ml) mustard seeds
1/2 teaspoon (2.5ml) fenugreek seeds
10 curry leaves
2 tablespoons (30ml) lime juice
1 tablespoon (15ml) fresh grated coconut


Wash the rice twice in water and then soak the rice in water for 30 minutes
While the rice is soaking, soak the cashew nuts in a cup of water for just 15 minutes
Measure an amount of water equal to 1 1/4 times the volume of the rice into a pan and heat until the water boils
Add the rice to the boiling water, along with the turmeric powder
Turn the heat down when the water starts boiling again
The rice should be cooked in about 10 minutes at which time all of the water should be absorbed
Turn off the heat, remove the rice and spread it in a flat dish, or pan, to cool and dry
Leave the rice to cool for half an hour
Heat the oil in a frying pan
Fry the chilli for 1 minute then add the mustard seeds, fenugreek seeds, drained cashew nuts and curry leaves and fry for 30 seconds
Add the lime juice and the cooked rice and stir well but carefully so as not to mash the rice
Place the rice onto a serving dish and garnish with coconut
Serve hot
