Dhal Recipe - Serves 4

Ingredients
350g (12 oz) lentils
6 cups (1.5L or 3 pints) water for soaking
6 cups (1.5L or 3 pints) water for cooking
3 tablespoons (45ml) vegetable oil
2 finely chopped medium onions
2 garlic cloves, peeled and crushed
1 tablespoon (15ml) ground coriander
2 teaspoons (10ml) ground turmeric
2 teaspoons (10ml) ground cumin
2 tablespoons (30g) curry powder
1 teaspoon (5ml) salt
Method
Wash the lentils in cold water
Soak the lentils in 6 cups of cold water for 4 hours
Drain the lentils
Cook the lentils in the 6 cups of clean water in a large pan for 30 minutes until the lentils are soft and then drain and put aside, removing any scum as it forms
Heat the oil in a large frying pan over a medium heat
Stir-fry the onion and garlic for 8-10 minutes until the onion is cooked
Mix spices together well
Add spices to onions and garlic and stir-fry for 2 minutes - the mixture gets very dry so you need to make sure that you stir all the time to prevent burning
Add the lentils, a cup of hot water and the salt, mix well and simmer for 5 minutes, stirring often - add extra boiling water if the dhal becomes too thick or dry
Serve hot on rice
