Dal Recipe

Ingredients

350g (12 oz) red lentils (masoor dal)
1.5L (53 fl oz or 6 cups) water for soaking
1.5L (53 fl oz or 6 cups) water for cooking
3 tablespoons (45ml) vegetable oil
2 medium onions, finely chopped
2 garlic cloves, peeled and crushed
1 tablespoon (15ml) ground coriander
2 teaspoons (10ml) ground turmeric
2 teaspoons (10ml) ground cumin
2 tablespoons (30g) curry powder
1 teaspoon (5ml) salt


Method

Rinse the lentils under a cold tap until the water runs clear
Soak the lentils in 6 cups of cold water for 4 hours
Drain the lentils
Cook the lentils in the 6 cups of clean water in a large saucepan for 30 minutes until the lentils are soft and then drain and put aside, removing any scum as it forms
Heat the oil in a large frying pan over a medium heat
Saute the onion and garlic until the onion is soft and golden (5-10 minutes), turning often
Add the ground coriander, ground turmeric, ground cumin and curry powder to the cooked onions, mix well and stir-fry for 2 minutes (the mixture gets very dry so you need to make sure that you stir all the time to prevent burning)
Add the lentils, a cup of hot water and the salt, mix well and simmer for 5 minutes, stirring often (add extra boiling water if the dal becomes too thick or dry)
Serve hot on rice or with roti (or chapati)
