Kadai Paneer Recipe - Serves 2
Ingredients
3 tablespoons (45ml) vegetable oil
2.5cm (1 inch) piece of cinnamon stick
1 green cardamom pod, crushed
1 bay leaf
2 cloves
1/4 teaspoon (1ml) cumin seeds
2 medium onions, peeled and finely chopped
1 teaspoon (5ml) ginger paste
1 green bell pepper with seeds removed and cut into small (1cm or 1/2 inch) pieces
2 medium to large tomatoes, coarsely chopped
1/2 teaspoon (2.5ml) salt
1 teaspoon (5ml) chilli powder
1 tablespoon (15m) ground coriander
1/2 teaspoon (2.5ml) dry fenugreek leaves
1/2 teaspoon (2.5ml) garam masala
250g (8oz) paneer cheese, cut into 1cm (1/2 inch) cubes
1 tablespoon (15ml) finely chopped fresh coriander leaves
Method
Heat the vegetable oil in a kadai (karahi) or large, heavy, frying pan over a medium to high heat
Add the cinnamon, cardamom pod, bay leaf, cloves and cumin seeds and stir-fry for 10 seconds
Add the onion and fry for 8 minutes, stirring often
Add the ginger paste and stir-fry for 1 minute
Add green bell pepper, tomatoes and salt and cook for 5 minutes, stirring often
Reduce the heat and add the chilli powder, coriander, fenugreek leaves and garam masala, mix well and cook for 30 seconds
Add the paneer cheese, mix well, cover and cook over a low heat for 4 minutes
Serve hot and garnish with the fresh coriander leaves
