Pumpkin Curry Recipe - Serves 4

Ingredients
500g (1 lb) pumpkin, peeled and cut into 2.5cm (1 inch) cubes
1 teaspoon (5ml) turmeric
1 teaspoon (5ml) paprika
750ml (1 1/4 pints) water
200g (7 oz) grated/shredded coconut
1 teaspoon (5ml) cumin seeds
1 tablespoon (15ml) vegetable oil
1 teaspoon (5ml) black mustard seeds
8 curry leaves
2 red chillies, cut in half lengthways
1 teaspoon (5ml) salt
Method
Put the pumpkin, turmeric, paprika and water into a large saucepan and mix well
Bring the saucepan to the boil, reduce the heat and simmer for 8 minutes
Whilst the pumpkin is cooking, grind the coconut and cumin seeds together (either in a food processor or spice grinder)
Add the coconut mix to the saucepan, mix well, cook for 3 minutes and then remove from the heat
Heat the oil in a small frying pan over a medium to high heat
Add the mustards seeds, curry leaves and chillies to the frying pan and stir-fry for 2 minutes
Add the salt and mix well
Pour the mixture from the frying pan into the pumpkin curry and mix well
Serve hot
