Cauliflower Tarka Recipe

Ingredients

1 tablespoon (15ml) cooking oil
1 teaspoon (5ml) cumin seeds
1 teaspoon (5ml) yellow mustard seeds
1KG (2 lbs 3 oz) cauliflower florets
2 cloves of garlic, peeled and crushed
2.5cm (1 inch) cube of fresh ginger root, peeled and grated
2 fresh red chillies, thinly sliced lengthways
1/2 teaspoon (2.5ml) garam masala
1/2 teaspoon (2.5ml) salt
250ml (9 fl oz) hot water


Method

Heat the oil in a large heavy-bottomed saucepan (you need one with a lid) over a medium heat
Add the cumin seeds and mustard seeds and stir-fry for 1 minute
Add the cauliflower florets, garlic, ginger and red chilli and mix well
Turn the heat up to high and stir-fry for 7 minutes
Sprinkle the garam masala and salt over the cooked cauliflower, add the hot water, mix well, cover and cook for 2 minutes, stirring once
Serve hot
