Chas's Chicken Curry Recipe

2 tablespoons (30ml) vegetable oil
1 large onion, peeled and finely chopped
1 red bell pepper (capsicum), finely chopped
2 chicken breast with skin removed, chopped into bite size pieces
2 fresh tomatoes, finely chopped
2.5cm (1 inch) piece of fresh ginger root, peeled and grated
3 garlic cloves, peeled and grated
1 dried Naga Bih Jaloka Chilli, soaked in hot water for 20 minutes and then finely chopped (this is a very hot chilli so be careful - use one of your usual chillies if you are unsure)
1 tablespoon curry paste
1 tablespoon (15ml) lemon juice
1 cup finely chopped fresh coriander


Heat the oil over a medium heat in a large frying pan
Stir-fry the onion for about 8 minutes until the onion is cooked and a golden colour
Add the red pepper and stir-fry for another 2 minutes
Add the chicken and cook for 5 minutes, stirring often
Add the chopped tomatoes, grated ginger, grated garlic and Naga Bih Jaloka Chilli, mix well and cook for 3 minutes, stirring now and again
Add the curry paste and lemon juice, mix well, bring to a simmer and simmer for 10 minutes, stirring now and again
Serve hot on rice, garnished with the chopped coriander leaves
