Balti Potatoes Curry Recipe

Ingredients

3 tablespoons (45ml) vegetable oil
1/2 teaspoon (2.5ml) white cumin seeds
1 teaspoon (5ml) chilli powder
1/4 teaspoon (1ml) onion seeds
1/4 teaspoon (1ml) black mustard seeds
1/4 teaspoon (1ml) fenugreek seeds
1/2 teaspoon (2.5ml) fennel seeds
3 cloves of garlic, peeled and coarsely chopped
2.5cm (1 inch) fresh ginger root, peeled and grated
2 medium onions, peeled and sliced
6 medium new potatoes, scrubbed and finely sliced
1 tablespoon (15ml) chopped fresh coriander leaves
1 fresh red chilli, finely chopped
1 fresh green chilli, finely chopped


Method

Heat the oil in a large frying pan (you need one with a lid) over a medium heat
Reduce the heat slightly, add the cumin seeds, chilli powder, onion seeds, mustard seeds, fenugreek seeds, fennel seeds, garlic and ginger, mix well and cook for 1 minute, stirring often
Add the onion and cook for 7 minutes, stirring often
Add the potatoes, fresh coriander, fresh red and green chillies and mix well
Reduce the heat to low, cover and cook for 7 minutes until the potatoes are cooked
Serve hot
