Curried Lamb Samosas Recipe

2 tablespoons (25g or 1 oz) butter
225g (8 oz) minced lamb
2 tablespoons (30ml) curry paste
1/2 teaspoon (2.5ml) salt
1/4 teaspoon (1ml) ground black pepper
12 sheets filo pastry, thawed and kept moist by wrapping in a damp clean dishtowel


Melt and heat half of the butter in a frying pan over a medium heat
Add the lamb and fry for around 6-7 minutes until the lamb is browned, stirring often
Add the curry paste, mix well and cook for 2 minutes, stirring once or twice
Add the salt and pepper, mix well, remove from the heat and set aside
Heat the oven to 200C (400F)
Melt the second half of butter in a small saucepan and remove from the heat once it is melted
Cut each sheet of filo pastry in half lengthways
Brush half a sheet of pastry with butter, place the other half of the sheet on top and then brush that with butter, put a heaped teaspoon of lamb into a corner of the pastry strip, fold over that end to make a triangle shape and then keep folding the strip over in the same way to make a triangle shaped package
Repeat the above package making process with the remaining pastry and lamb
Brush the outside of the samosas with butter and put onto a baking tray
Bake in the oven for between 10-15 minutes until the samosas are golden
Serve hot
