Massaman Chickpea Curry Recipe

From 313 to 469 calories each serving (511 to 667 calories if eating with rice)

Ingredients

225g (8 oz) chickpeas, soaked in a bowl of water overnight
2 tablespoons (30ml) vegetable oil
2 tablespoons (30ml) Massaman curry paste (there is a Massaman curry paste recipe on the website or you can buy this ready made)
1 tin/can (400ml or 14 fl oz) coconut cream
450ml (16 fl oz) water
2 medium potatoes, peeled and cut into 1 cm (1/2 inch) cubes
2 small onions, peeled and coarsely chopped
2 fresh chillies, finely sliced lengthways
2 tablespoons (30ml) soy sauce
1/2 teaspoon (2.5ml) salt
1 tablespoon (15ml) sugar


Method

Drain the chickpeas and set aside
Heat the oil in a large saucepan over a medium heat
Add the curry paste and mix well
Add the coconut cream and mix well
Add the water, potatoes, chickpeas, onions, chillies, soy sauce, salt and sugar, mixing well as each ingredient is added
Bring the saucepan to the boil, reduce the heat to a good simmer and simmer for 20-25 minutes until the potatoes and chickpeas are cooked, stirring now and again
Serve hot
