Thai Coconut and Vegetable Curry Recipe

Ingredients

2 tablespoons (30ml) vegetable cooking oil
1 medium onion, peeled and coarsely chopped
2 tablespoons (30ml) Massaman curry paste (there is a recipe for this on the website or you can buy this ready made)
1 tin/can (400ml or 14 fl oz) coconut cream
1/2 teaspoon (2.5ml) salt
2 teaspoons (10ml) sugar
350g (12 oz) potatoes, peeled and cut into 2.5cm (1 inch) cubes
1 large carrot, peeled and cut in half lengthways and then cut into 2.5cm (1 inch) lengths
450ml (16 fl oz) water
110g (4 oz) runner (green) beans, cut into 2.5cm (1 inch) lengths
110g (4 oz) courgettes, cut into half lengthways and then cut into 2.5cm (1 inch) lengths
2 tablespoons (30ml) lime juice
2 fresh green chillies, finely sliced lengthways


Method

Heat the oil in a large saucepan over a medium heat
Add the onion and Massaman paste and mix well
Add the coconut cream, salt and sugar, mix well, bring to the boil, reduce the heat to simmer and simmer for 3 minutes, stirring a few times
Add the potatoes and carrot, mix well, bring back to a simmer, cover and simmer for 8 minutes
Add the water, mix well and bring to the boil, stirring now and again
Add the beans and courgettes, mix well, bring back to a simmer and simmer for 8 minutes, stirring now and again
Add the lime juice and chillies and mix well
Serve hot
