Puri (version 1) Recipe

2 cups (250g or 8 oz) whole wheat flour
1/2 tablespoon (7.5ml) vegetable oil
1/4 teaspoon (1ml) salt
3/4 cup (190ml or 7 fl oz) warm water
Oil for deep frying


Mix the flour, 1/2 tablespoon of oil and salt in a bowl
Add the water a little at a time, mixing well until a firm dough is made
Knead the dough for 10 minutes
Cover the dough and leave for 30 minutes
Divide the dough into balls about the size of a golf ball
Roll each ball into a 15cm (6-inch) round
Heat the deep frying oil in a large pan
Fry the puri one at a time - hold the puri under the oil until they puff up then turn the puri over and fry until a golden brown colour
Remove the puri from the oil and allow to drain on a kitchen paper towel
Fry all of the puri
Serve immediately
