Garam Masala #2 Recipe - Makes 62g (2 oz)
 
Ingredients
4 teaspoons (20ml) coriander seeds
2 teaspoons (10ml) black peppercorns
2 teaspoons (10ml) caraway seeds
1 teaspoon (5ml) cardamom seeds
1 teaspoon (5ml) cumin seeds
1 teaspoon (5ml) cloves
5cm (2 inch) broken cinnamom stick
1 teaspoon (5ml) freshly grated nutmeg
1 teaspoon (5ml) mace blades
Method
Warm spices in a moderate oven for 2 minutes
Grind in a spice or coffee grinder
Put through a sieve
Store in airtight container for up to 3 weeks
