Chicken and Tomato Balti Curry Recipe

3 tablespoons (45ml) cooking oil
4 curry leaves
1/4 teaspoon (1ml) black mustard seeds
8 medium tomatoes, thinly sliced
1 teaspoon (5ml) ground coriander
1 teaspoon (5ml) chilli powder
1 teaspoon (5ml) salt
1 teaspoon (5ml) ground cumin
3 cloves of garlic, peeled and crushed
680g (1 lb 8 oz) boneless and skinless chicken breasts, cut into 19ml (3/4 inch) cubes
2/3 cup (150ml or 5 fl oz) cold water
1 tablespoon (15ml) fresh coriander (cilantro) leaves, finely chopped


Heat the oil in a large frying pan or saucepan over a medium heat
Add the curry leaves and mustard seeds and stir-fry for 2 minutes
Add the tomatoes, mix well and cook for 2 minutes, stirring a couple of times
Add the ground coriander, chilli powder, salt, cumin and garlic, mix well
Add the chicken cubes, mix well and saute for 5 minutes, turning often
Add half of the cold water, mix well, bring to the boil, reduce the heat to maintain a simmer and simmer until the chicken is cooked (10-15 minutes), stirring often (add more of the water if the curry becomes too dry but not too much as this a dryish balti)
Add the fresh coriander (cilantro) leaves and mix well
Serve hot
