Leftover Turkey Curry (version 6) Recipe

Ingredients

1 tablespoon (15ml) cooking oil
1 medium onion, peeled and finely chopped
1 red bell pepper (capsicum), deseeded and finely chopped
350g (12 oz) precooked turkey, cut into bite-sized pieces
1 tablespoon (15ml) masala paste
1 tin/can (400ml or 14 fl oz) coconut milk
1 tablespoon (15ml) mango chutney
100g (4 oz) spinach, washed and coarsely chopped
1 tablespoon (15ml) lime juice
1/2 teaspoon (2.5ml) salt


Method

Heat the cooking oil in a large frying pan over a medium heat
Add the onion and bell pepper (capsicum), mix well and stir-fry for 4 minutes
Add the turkey, masala paste, coconut milk and mango chutney, mix well, bring to the boil, reduce the heat to maintain a simmer and simmer for 5 minutes, stirring often
Add the spinach, mix well and simmer for 2 minutes, stirring a couple of times
Add the lime juice, sprinkle in the salt and mix well
Serve hot
