Tomato and Onion Kachumber (version 1) Recipe

Ingredients

1/2 cup (125ml or 4 fl oz) lime juice
1/2 teaspoon (2.5ml) sugar
1/8 teaspoon (0.5ml) salt
6 medium fresh tomatoes, finely chopped
1/2 English cucumber (or 1 Lebanese cucumber), finely chopped
8 spring onions (scallions/green onions), topped and tailed and finely chopped
1 fresh green chilli, finely chopped (deseed the chilli first if you want a milder kachumber)
1 tablespoon (15ml) fresh coriander (cilantro) leaves, finely chopped
1 tablespoon (15ml) fresh mint leaves, finely chopped


Method

Put the lime juice, sugar and salt into a large bowl, mix well and keep stirring until the sugar is completely dissolved
Add the tomatoes, cucumber, spring onions (scallions), chilli, coriander (cilantro) and mint and mix well
Cover the kachumber with kitchen film and put into the fridge for an hour to chill a little
Serve cold
