Easy Leftover Turkey Curry Recipe

Ingredients

3 tablespoons (45ml) cooking oil
1 large onion, peeled and finely chopped
3 cloves of garlic, peeled and crushed
2.5cm (1 inch) fresh ginger root, peeled and grated
1 teaspoon (5ml) ground coriander
1 teaspoon (5ml) ground cumin
1 teaspoon (5ml) ground turmeric
1 teaspoon (5ml) ground cinnamon
3 green cardamom pods, lightly crushed
1 teaspoon (5ml) paprika
400g (14oz) leftover cooked turkey, skinless and chopped into bite-sized pieces
150ml (5 fl oz) cold water
125ml (4 fl oz) plain unsweetened natural yogurt
1/2 teaspoon (2.5ml) chilli powder
1/2 teaspoon (2.5ml) salt
3 tablespoons (45ml) fresh coriander (cilantro) leaves, washed and finely chopped


Method

Heat the oil in a medium to large saucepan over a medium heat
Add the onion and saute until soft and just turning brown at the edges (7-10 minutes, turning often
Add the garlic and ginger and mix well
Add the ground coriander, ground cumin, ground turmeric, ground cinnamon, cardamom pods and paprika, mix well and stir-fry for 30 seconds
Add the leftover turkey and mix well
Add the water and yogurt and mix well
Bring to a simmer, add the chilli powder and salt, mix well and simmer for 5 minutes, stirring a few times
Add the fresh coriander (cilantro) and mix well
Serve hot on basmati rice
