Dosa (version 2) Recipe

Ingredients

200g (7 oz) basmati rice
100g (3 1/2 oz) split urad dal
1/2 teaspoon (2.5ml) ground fenugreek
1/4 teaspoon (1ml) salt
5 tablespoons (75ml) vegetable oil


Method

Soak the rice and dal in a large bowl of water for minimum of 12 hours, drain, put into a food processor, add 1/2 cup (125ml or 4 fl oz) of warm water and blend into a smooth pancake batter
Put the batter into a large bowl, cover with a damp cloth and place in a warm place for a minimum of 6 hours when the mixture should have fermentation bubbles
Preheat the oven to 150C (300F) in order to keep the cooked dosa warm
Add the ground fenugreek and salt and mix well
Add a tablespoon (15ml) of the vegetable oil to a large frying pan over a medium heat
Once the oil is hot, pour 1/4 of the batter into the frying pan, spread the batter thinly in the frying pan, brush a teaspoon (5ml) of the oil over the top of the batter, cook until the dosa is ready and then remove the dosa with a spatula and put into the oven to keep warm
Repeat the above cooking process until all 4 dosa are ready
Serve warm
