10 strands (threads) of saffron, lightly crushed and soaked in a tablespoon (15ml) of hot water for 5 minutes
1L (35 fl oz) full milk
75g (2 1/2 oz) basmati rice, washed and drained
15g (1/2 oz) flaked pistachios
15g (1/2 oz) flaked almonds
250g (9 oz) sugar
5 green cardamom pods, lightly crushed


Put the saffron, milk, rice, pistachios and almonds in a large saucepan and mix well
Heat the saucepan over a low heat until the milk is simmering and keep cooking until the rice is cooked (10-15 minutes), stirring often
Add the sugar, mix well t0 make sure that the sugar is fully dissolved and cook for 1 minute, stirring most of the time
Add the cardamom pods, mix well, remove from the heat and serve
