Balti Lamb and Chickpea Curry Recipe

Ingredients

1 tablespoon (15ml) cooking oil
1 medium onion, peeled and finely chopped
2 tablespoons (30ml) balti curry paste
750g (1 lb 10 oz) lean lamb, cut into 1cm (1/2 inch) cubes
1 tin/can (400g or 14 oz) chopped tomatoes
1 tin/can (400g or 14 oz) chickpeas, drained


Method

Heat the oil in a heavy bottomed medium saucepan (you need one with a lid) over a medium heat
Add the onion and saute until cooked and golden (5-8 minutes), turning often
Add the curry paste, mix well and cook for 1 minute, stirring a couple of times
Add the lamb, mix well and saute for 6 minutes, turning often
Add the tomatoes and 1/2 cup (125ml or 4 fl oz) cold water, bring to the boil, reduce the heat to maintain a simmer, cover and simmer for 60 minutes, stirring every few minutes
Add the chickpeas, bring back to the boil, reduce the heat to maintain a simmer and simmer for 30 minutes, stirring every few minutes (the liquid will reduce with the lid off, add a little hot water if the curry becomes too dry)
Serve hot
