Beef Massaman Curry Recipe

Ingredients

2 tablespoons (30ml) cooking oil
500g lean beef, cut into 1cm (1/2 inch) cubes
1 small onion, peeled and finely chopped
1 tin/can (400ml or 14 fl oz) coconut cream
3 tablespoons (45ml) Massaman curry paste
1 cup (250ml or 9 fl oz) beef stock
1/4 cup (30g or 1 oz) cashews, lightly crushed
2 medium potatoes, peeled and cut into 19mm (3/4 inch) cubes
1 medium sweet potato, peeled and cut into 19mm (3/4 inch) cubes
5cm (2 inch) cinnamon stick
1 teaspoon (5ml) ground cardamom
1 tablespoon (15ml) brown sugar
1 tablespoon (15ml) lime juice
1 tablespoon (15ml) fish sauce


Method

Heat the oil in a large saucepan over a medium to high heat
Add the beef cubes, saute until browned (3-5 minutes), turning often, and then remove the beef cubes and set aside
Reduce the heat to medium, add the chopped onion to the saucepan and cook until soft (6-9 minutes), turning often
Add half of the can of coconut cream (200ml or 7 fl oz) and the Massaman curry paste, mix well, bring to a good simmer and simmer for 1 minute, stirring often
Add the sauteed beef cubes (along with the juice), the other half can (200ml or 7 fl oz) of coconut cream, beef stock, cashews, potatoes, sweet potato, cinnamon stick, ground cardamom, brown sugar, lime juice and fish sauce and mix well
Bring to a simmer, adjust the heat to maintain the simmer, cover and simmer for 2 hours, stirring now and again
Serve hot
