Coriander (Cilantro) and Lime Cauliflower Rice Recipe

1 medium cauliflower, trimmed to just leave the florets and washed
1 tablespoon (15ml) vegetable oil
1/2 small onion, peeled and finely chopped
1 clove of garlic, peeled and crushed
1 tablespoon (15ml) lime juice
2 tablespoons (30ml) fresh coriander (cilantro) leaves, washed and finely chopped


Put the cauliflower florets into a food processor and process until the cauliflower has a similar texture to rice
Heat the vegetable oil in a large saucepan over a medium heat
Add the chopped onion and saute until cooked and soft (7-9 minutes), turning often
Add the garlic, mix well and saute for 2 minutes, turning so the ingredients do not stick and burn
Add the cauliflower rice, mix well and saute until the cauliflower is cooked (7-10 minutes) turning each minute
Remove from the heat, add the lime juice and fresh coriander (cilantro), mix well and serve
