Goan Curry Powder Recipe - Makes about 150g (5 oz)

Goan Curry Powder Recipe


Ingredients

40g (1 1/2 oz) grated (shredded) coconut
4 cloves of garlic, peeled and crushed
4 fresh green chillies, very finely sliced lengthways
3 tablespoons (45ml) ground coriander
2 tablespoons (30ml) white poppy seeds
1 tablespoon (15ml) black peppercorns
1 tablespoon (15ml) fennel seeds
1 tablespoon (15ml) carom seeds
10 green cardamom pods, lightly crushed
10 cloves
1 teaspoon (5ml) ground turmeric


Method

Heat a medium heavy-bottomed frying pan over a medium heat
Add the coconut and dry roast until the coconut is golden and crunchy (6-9 minutes), stirring all the time, and then tip into a small bowl to cool
Add the garlic and green chillies to the frying pan and dry-roast for 2 minutes, stirring all the time, and then tip into the small bowl to cool
Add the ground coriander, white poppy seeds, black peppercorns, fennel seeds, carom seeds, green cardamom pods, cloves and ground turmeric to the frying pan and dry-roast for 2 minutes, stirring all the time, and then tip into the small bowl and let cool
Mix all of the roasted ingredients in the bowl and then grind them into a fine powder (you may have to grind the ingredients in batches)
Put the curry powder into an airtight glass container and use as needed
