Ingredients

150g (5oz or 1 1/4 cups) standard (plain) flour
95g (3 oz or 2/3 cups) wholemeal flour
1/4 teaspoon salt
30g (1 oz or 2 tablespoons) butter, melted
60ml (2 fl oz or 4 tablespoons) milk
60ml (2 fl oz or 4 tablespoons) cold water
85g (3 oz or 6 tablespoons) butter, melted


Method

Sieve the standard flour, wholemeal flour and salt into a large bowl and mix well
Add the 30g (1 oz) of melted butter and mix the ingredients until it is like breadcrumbs
Add the milk and water, mix well and knead into a soft dough
Put the dough on a lightly floured surface and knead until you have a smooth dough
Cover the dough with a cloth and leave to rest for 3 hours
Divide the dough into 6 equal pieces and roll each piece into a smooth ball
Turn on the oven so it heats up to 80C (175F) for when you start to cook the parathas
Make sure that the 85g (3 oz) of butter is melted and ready to use
Take one of the dough balls, roll it into a round that is 18cm (7 inches) across, brush the round with a scant amount of melted butter, fold the round in half and then fold it in half again so you have a wedge shape
Now roll the dough out into an 18cm (7 inch) round again (or as close to a round that you can get), brush with melted butter again, fold the round in half and then half again
For the 3rd time, roll the dough out into an 18cm (7 inch) round again (or as close to a round that you can get), brush with melted butter again, fold the round in half and then half again
For the 4th time, roll the dough out into an 18cm (7 inch) round again (or as close to a round that you can get) and brush with melted butter again (no folding this time)
Now repeat the rolling and folding process on the other 5 dough balls until you have 6 flat parathas to cook
Lightly smear a large heavy-bottomed frying pan with melted butter and heat over a medium heat
Put the first first paratha into the frying pan and cook until the bottom side is mottled brown and then flip over and cook the other side the same (1-3 minutes each side)
Put the cooked paratha into the preheated oven and then cook the rest of the parathas
Serve warm/hot
