Palak Paneer (version 2) Curry Recipe - Serves 4

Palak Paneer (version 2) Curry Recipe

Ingredients

450g (1 lb) fresh spinach, washed and coarsely chopped
1/2 cup (125ml or 4 fl oz) hot water
150g (5 oz) paneer cheese, cut into 1cm (1/2 inch) cubes
5 tablespoons (75ml) vegetable oil
1 medium onion, peeled and finely chopped
5cm (2 inch) cinnamon stick
4 green cardamom pods, lightly crushed
2 cloves
1 teaspoon (5ml) salt
2 cloves of garlic, peeled and crushed
2.5cm (1 inch) cube fresh ginger root, peeled and grated
1 fresh green chilli, finely chopped
1/2 teaspoon (2.5ml) ground turmeric
2 medium tomatoes, finely chopped
1 teaspoon (5ml) ground coriander
1 teaspoon (5ml) ground cumin
1/2 teaspoon (2.5ml) chilli powder
1 teaspoon (5ml) ground fenugreek
60ml (2 fl oz) cream


Method

Boil the water in a medium saucepan, add the spinach, cook for 2 minutes in the boiling water (stirring often) and then remove from the heat and set aside to cool
Heat 3 tablespoons (45ml) of the vegetable oil in a large heavy-bottomed frying pan over a high heat
Add the paneer cubes and fry until they are evenly browned (6-15 minutes), turning often, and then remove from the heat and set aside on some paper kitchen roll to remove the excess oil
Put the spinach into a food processor, along with the liquid it was cooked in, blend into a smooth paste and set aside
Heat 2 tablespoons (30ml) of the vegetable oil in a medium saucepan over a medium heat
Add the onion, cinnamon stick, cardamom pods, cloves and salt and saute until the onions are soft and golden (5-8 minutes)
Add the garlic, ginger, fresh green chilli and ground turmeric, mix well and stir-fry for 1 minute
Add the tomatoes, mix well and cook for 5 minutes, stirring often
Add the ground coriander, ground cumin, chilli powder and ground fenugreek and mix well
Add the previously cooked spinach and cook for 2 minutes, stirring often (add a little hot water if the curry gets too dry)
Add the paneer cheese, mix well and cook for 1 minute, stirring often
Add the cream, mix well and cook for 1 minute, stirring often so it the curry does not stick and burn
Serve hot
