Cauliflower Bhaji (Gobi Mutter) Recipe

1 medium cauliflower
2 tablespoons (30ml) vegetable oil
1 teaspoon (5ml) cumin seeds
1 teaspoon (5ml) black mustard seeds
1/4 teaspoon (1ml) asafoetida (hing)
1/2 cup (55g or 2 oz) frozen peas, thawed/defrosted
1/2 cup (110g or 4 oz) tomato puree
3/4 teaspoon (4ml) chilli powder
1/2 teaspoon (2.5ml) ground turmeric
1 teaspoon (5ml) ground coriander
1/4 teaspoon (1ml) salt
1/2 teaspoon (2.5ml) garam masala


Trim off the stalk and leaves of the cauliflower so you are left with just the florets, chop the cauliflower so you have small florets (no bigger than 2.5cm (1 inch) cubed) and set aside
Heat the vegetable oil in a medium heavy-bottomed saucepan (you need one with a lid) over a medium heat
Add the cumin and black mustard seeds and stir-fry until the seeds start to pop (1-2 minutes)
Add the asafoetida (hing) and mix well
Add the cauliflower florets, mix well, cover and cook for 2 minutes, stirring every 30 seconds
Add the peas, tomato puree and 1/4 cup (60ml or 2 fl oz) hot water, mix well, bring to a good simmer, adjust the heat to maintain a simmer, cover and simmer for 5 minutes, stirring a couple of times
Add the chilli powder, ground turmeric, ground coriander and salt, mix well, cover and cook for 5 minutes, stirring every minute (add a little hot water if the curry becomes too dry)
Add the garam masala, mix well and cook for 2 minutes, stirring to make sure the curry does not stick to the saucepan (add a little hot water if the curry becomes too dry)
Serve hot
