Aloo Jeera (version 1) Recipe

Ingredients

1 tablespoon (15ml) ghee
1 teaspoon (5ml) cumin seeds
1/2 teaspoon (2.5ml) chilli powder
1/4 teaspoon (1ml) ground turmeric
2 medium potatoes, peeled and cut into 1cm (1/2 inch) cubes
1/2 teaspoon (2.5ml) salt
1 teaspoon (5ml) lemon juice


Method

Heat the ghee in a medium heavy-bottomed saucepan (you need one with a lid) over a medium heat
Add the cumin seeds, chilli powder and turmeric, mix well and stir-fry for 2 minutes
Add the potato cubes, salt and 1/4 cup (60ml or 2 fl oz) cold water and mix well
Bring the water to a good simmer, cover and simmer until the potato is cooked (8-12 minutes), stirring every minute or so
To get rid of the water, remove the lid, turn up the heat and saute until the water has gone, stirring often
Sprinkle the lemon juice over the aloo jeera
Serve hot
