Pilaf Rice Recipe

400g (14 oz) basmati rice
1 tablespoon (15ml) vegetable oil
4 spring onions (scallions/green onions), topped and tailed and cut into 6mm (1/4 inch) pieces
1 teaspoon (5ml) garlic powder
1/2 teaspoon (2.5ml) ground cinnamon
1/4 teaspoon (1ml) paprika
2 teaspoons (10ml) curry powder
1/4 teaspoon (1ml) ground cloves
4 cups (1L or 35 fl oz) vegetable broth


Wash the bamati rice under a cold tap, put the basmati rice in a large bowl, cover with cold water, soak for 30 minutes and then drain and set aside
Heat the vegetable oil in a large saucepan or frying pan (you need one with a lid) over a medium heat
Add the spring onions (scallions/green onions) and stir-fry for 2 minutes
Add the garlic powder, ground cinnamon, paprika, curry powder and ground cloves and mix well
Add the washed basmati rice and mix well
Add the vegetable broth, mix well, bring to a simmer, lower the heat to maintain a simmer, cover and gently simmer until the rice is cooked (15-25 minutes)
Serve hot
