Alu Paratha Recipe - Makes 8

Alu Paratha Recipe

2 medium potatoes, peeled and each cut into 4 pieces
180g (6 1/2 oz) atta (wheat) flour
1/2 teaspoon (2.5ml) salt
2 teaspoons (10ml) vegetable oil
100ml (3 1/2 fl oz) warm water
2 fresh green chillies, finely chopped
1/2 teaspoon (2.5ml) ginger paste
1/4 teaspoon (1ml) ground turmeric
1 teaspoon (5ml) ground coriander
1/2 teaspoon (2.5ml) ground cumin
1/2 teaspoon (2.5ml) garam masala
3 tablespoons (45ml) fresh coriander (cilantro) leaves, finely chopped
2 teaspoons (10ml) butter


Boil a medium saucepan that is half full of water, add the potato, bring back to the boil, adjust the heat to maintain the boil, boil until the potato is cooked (10-20 minutes), drain then mash and set aside
Put the atta (wheat) flour and the sale into a large bowl and mix well
Add the vegetable oil and half of the warm water and mix well
Keep adding a little more of the warm water at a time and kneading until you have a smooth dough, knead for 5 minutes, cover with a clean cloth or kitchen paper, leave to rest for 30 minutes then split into 8 equal sized pieces and set aside
Put the mashed potato into a large bowl
Sprinkle in the green chillies, ginger paste, ground turmeric, ground coriander, ground cumin, garam masala and fresh coriander (cilantro), mix really well and split the mixture into 8 equal pieces
Use extra flour, as needed, during the following rolling so that the dough does not stick
Roll each of the pieces of dough into a ball, press gently to flatten a little, put the dough onto a lightly floured surface and roll into a round of 7.5cm (3 inches)
Repeat the dough processing until you have 8 dough rounds
Place 1 of the rounds onto the lightly floured surface, put one of the potato mixtures onto the middle of the dough round, spread a little until the middle 2.5cm (1 inch) is covered, fold the dough around the potato mixture and pinch the dough so you have a stuffed dough ball and then set aside
Repeat the above process with each of the other dough rounds until you have 8 stuffed dough balls
Preheat the oven to 150C (300F) to keep the cooked parathas warm
Put 1 of the stuffed dough balls onto the lightly floured surface, lightly press the top of the dough ball and then roll out until you have a round of about 20cm (8 inches) and set aside
Repeat the process until you have 8 large rounds
Heat a large frying pan or tawa over a medium heat
Take the first uncooked paratha, put into the frying pan (or tawa) and cook until the lower side is lightly browned (1-3 minutes), flip the paratha over and cook until the second side is lightly browned (1-2 minutes) and then put into into the oven to keep warm
Repeat the cooking process to cook all of the parathas
Serve warm, smeared with melted butter
