Besan ki Roti Recipe

225g (8 oz) chickpea (besan or gram) flour
1/2 cup (125g or 4 oz) unsweetened natural yogurt


Put the flour and yogurt into a large bowl and mix well to make a firm dough (add a little water, if needed)
Split the dough into 6 equal pieces and roll each piece into a dough ball
Lightly sprinkle a clean surface with a little chickpea flour and roll each dough ball into a round of 15cm (6 inches), using the extra chickpea flour to stop the dough from sticking
Heat the oven to 150C (300F)
Heat a large heavy-bottomed frying pan over a medium heat until it is hot
Place one of the dough rounds into the frying pan and leave for about 10 seconds
After the 10 seconds, turn over the dough and leave for about 20 seconds
After the 20 seconds, turn over the roti again and use a dry folded kitchen towel (or a kitchen utensil such as a spatula) to apply gentle pressure to the roti (the roti will puff up a little like a balloon) - remove the roti from the frying pan once it has puffed up, wrap it in kitchen foil and put into the oven to keep warm
Cook the remaining dough rounds until all of the roti are cooked
Serve warm
