Diwali Coconut Ladoo Recipe

Ingredients

100g (3.5 oz) white sugar
60ml (2 fl oz) water
50g (2 oz) desiccated coconut
1/2 teaspoon (2.5ml) ground cardamom


Method

Mix the sugar and water in a medium heavy-bottomed saucepan until the sugar is dissolved
Heat the saucepan over a medium heat until the mixture is gently boiling. You need to keep gently boiling until you get the consistency to be a "one thread consistency" - dip a wooden spoon into the syrup, remove from the syrup, leave to cool for 5 to 10 seconds, touch the spoon with your forefinger, touch your thumb and forefinger together and then gently pull the thumb and finger apart - if the a single thread is formed and it breaks straightaway then you only have a "half thread consistency" - keep boiling and testing until the test results in a single thread that does not break when you pull the thumb and forefinger apart because this is "one thread consistency" - if you get more than one thread forming then the syrup is too thick (it has a "two thread" or "three thread" consistency) and you'll need to add a little water to thin the syrup a little
Remove the saucepan from the heat once the sugar and water syrup is the correct consistency
Add the desiccated coconut and ground cardamom and mix well
Let the mixture cool until you can safely handle the mixture without burning yourself
Split the mixture into 12 equal pieces and roll into balls
Keep in an airtight container, in a cool place, until needed
