Chilli Chicken Curry Recipe

3 tablespoons (45ml) cooking oil
1 small onion, peeled and finely chopped
1 teaspoon (5ml) whole cumin seeds
1 teaspoon (5ml) black mustard seeds
2.5cm (1 inch) cube fresh ginger root, peeled and grated
3 cloves of garlic, peeled and crushed
1 tablespoon (15ml) curry powder
1/2 teaspoon (2.5ml) ground coriander
1 teaspoon (5ml) salt
1 medium green bell pepper (capsicum), with core removed and finely chopped
3 fresh green chillies, finely chopped
680g (1 lb 8 oz) boneless and skinless chicken breast, cut into 19mm (3/4 inch) pieces
2 medium tomatoes, finely chopped
1/4 cup (60ml or 2 fl oz) fresh coriander (cilantro) leaves, finely chopped


Heat the cooking oil in a large heavy-bottomed frying pan or saucepan over a medium heat
Add the onion, cumin seeds, black mustard seeds, fresh ginger and garlic, mix well and fry until the onion is soft and cooked (5-9 minutes), stirring often
Add the curry powder, ground coriander and salt, mix well and stir-fry for 1 minute (add a little hot water if the ingredients get too dry)
Add the bell pepper (capsicum), fresh green chillies and chicken, mix well and saute for 10 minutes, turning often (add a little hot water if the ingredients get too dry)
Add the tomatoes, mix well and saute for 5 minutes, turning often
Make sure that the chicken is cooked, cooking for longer if needed
Add the fresh coriander (cilantro) leaves, mix well and serve
