Cumin Rice Recipe - Serves 4

Cumin Rice Recipe

225 calories each serving


185g (6 1/2 oz) basmati rice
2 tablespoons (30ml) vegetable cooking oil
1 teaspoon (5ml) cumin seeds
2 cups (500ml or 17 fl oz) boiling water
1 teaspoon (5ml) salt


Put the rice into a sieve, rinse under cold running water and set aside when the water runs clear out of the sieve
Add the cooking oil to a large heavy-bottomed saucepan (you need one with a lid) over a medium heat
Sprinkle in the cumin seeds and fry until they begin to pop (1-2 minutes), stirring often
Add the basmati rice and mix well so that the rice is well coated with the cooking oil
Carefully add the boiling water to the saucepan, mix well, bring the water back to a simmer, sprinkle in the salt, cover and cook until the water has been absorbed and the rice is cooked (15-25 minutes), stirring every few minutes
Serve hot
