Cauliflower Poriyal Recipe - Serves 4

Cauliflower Poriyal Recipe

3 tablespoons (45ml) vegetable oil
1/2 teaspoon (2.5ml) black mustard seeds
2 teaspoons (10ml) cumin seeds
5 curry leaves
6 cloves of garlic, peeled and crushed
2 dried red chillies
1/2 teaspoon (2.5ml) red chilli powder
1/2 teaspoon (2.5ml) salt
1 medium cauliflower, removing the stems and leaves to just keep the florets and chop the florets so that they are no bigger than 2.5cm (1 inch)
2 tablespoons (30ml) fresh coriander (cilantro) leaves, finely chopped


Heat the vegetable oil in a medium heavy-bottomed saucepan (you need one with a lid) over a medium heat
Add the mustard seeds and fry until they start to pop (60 to 120 seconds) sitting often
Add the cumin seeds, curry leaves, garlic and dried chillies, mix well and fry for 1 minute, stirring a couple of times
Sprinkle in the red chilli powder and salt and mix well
Add the cauliflower florets and mix well so that they are well coated with the spices
Reduce the heat to low, cover and cook until the cauliflower is cooked (10-20 minutes), stirring every few minutes (add a little hot water if the ingredients are too dry)
Sprinkle in the fresh coriander (cilantro) and mix well
Serve hot
