Balti Vegetables (version 2) Recipe

Ingredients

2 tablespoons (30ml) cooking oil
1 teaspoon (5ml) cumin seeds
5 dried red chillies
1 medium red capsicum (bell pepper), with core removed and cut into small pieces (about 5cm by 6mm or 2 inches by 1/4 inch)
1 medium green capsicum (bell pepper), with core removed and cut into small pieces (about 5cm by 6mm or 2 inches by 1/4 inch)
2 large courgettes (zucchini), cut into small pieces (about 5cm by 6mm or 2 inches by 1/4 inch)
3 spring onion (scallions), topped and tailed and cut into 6mm (1/4 inch) slices
170g (6 oz) green (French/string) beans, cut into 2.5cm (1 inch) pieces
1 teaspoon (5ml) salt
2 tablespoons (30ml) lemon juice
2 tablespoons (30ml) finely chopped fresh coriander (cilantro) leaves


Method

Heat the cooking oil in a large frying pan or karahi over a medium to high heat
Add the cumin seeds and dried red chillies and fry for 1 minute, stirring a few times
Add the red and green capsicums, courgettes, spring onions and green beans and mix well
Sprinkle in the salt, add the lemon juice, mix well and stir-fry until the green beans and courgettes are cooked (5-10 minutes)
Serve hot, garnished with the fresh coriander (cilantro) leaves
