Paneer Bhajis Recipe


500g (1 lb 1 oz) paneer cheese
250g (9 oz) chickpea (besan/gram/garbanzo) flour
15g (1/2 oz) rice flour
4 teaspoons (20ml) chilli powder
1 teaspoon (5ml) cumin seeds
1/2 teaspoon (2.5ml) salt
Oil for deep frying


Cut the paneer cheese into cheese sticks of about 6mm (1/4 inch) square and 19mm (3/4 inch) long and then set aside
Sieve the chickpea flour, rice flour, chilli powder, cumin seeds and salt into a large mixing bowl and mix well
Add 300ml (10 fl oz) water and whisk into a batter (about the same consistency as a pancake batter), adding more water if needed (add any more water a little at a time so the batter does not get too runny)
Heat the oil to 180C (350F)
Put the paneer cheese sticks into the bowl of batter and turn them to make sure that they are completely covered
Use a slotted spoon to scoop up the coated paneer cheese sticks, gently put them into the oil and cook until the batter is crisp and golden (3-6 minutes), turning gently
Remove the cooked paneer cheese sticks, put them onto kitchen paper and dab the sticks to remove the excess oil
Serve hot with your favourite chutney
