1 small onion, peeled and coarsely chopped
2.5cm (1 inch) cube fresh ginger root, peeled and quartered (cut into 4 pieces)
2 cloves of garlic, peeled and halved
1 teaspoon (5ml) ground coriander
1 teaspoon (5ml) ground cumin
1/2 teaspoon (2.5ml) salt
4 tablespoons (60ml) cooking oil
500g (1 lb 1 oz) lean minced (ground) lamb
1 egg (optional)
2 tablespoons (30ml) fresh coriander (cilantro) leaves, finely chopped (optional)


Put the onion, ginger, garlic, ground coriander, ground cumin and salt into a food processor and blend into a smooth paste
Heat 1 tablespoon (15ml) of the cooking oil in a medium heavy-bottomed saucepan over a medium heat
Add the onion paste to the saucepan, stir-fry for 3 minutes then tip onto a plate to cool
Put the lamb into a large mixing bowl, add the fresh coriander (cilantro) and mix well
Add the onion paste and mix well
Take a small amount of the ingredients (about the size of a golf ball) and check to see if the ingredients bind when shaped into a ball - if they do not bind, break the egg into a bowl, beat it well, add some of the beaten egg to the ingredients, mix well and test to see if the ingredients now bind into a ball (keep adding more egg and retesting until the ingredients bind)
Split the lamb mixture into 16 equal sized pieces and roll each piece into a ball
Heat the remaining 3 tablespoons (45ml) of cooking oil in a large frying pan over a medium heat
Add the kofta balls and cook until cooked and golden (5-7 minutes), stirring/turning gently
Make sure the koftas are well cooked
Serve hot (a yogurt-based dip goes well with koftas)
If using, sprinkle some fresh coriander (cilantro) over the koftas
