Cauliflower Curry Soup Recipe

1 medium cauliflower, stalk and leaves discarded leaving just the florets and cut the florets so the largest is no bigger than 2.5cm (1 inch)
750ml (26 fl oz or 3 cups) vegetable stock
1 medium onion, peeled and very finely chopped
1 large potato, peeled and cut into 1cm (1/2 inch) cubes
1 teaspoon (5ml) salt
1 teaspoon (5ml) curry powder
1 cup (250ml) fresh coriander (cilantro) leaves, washed and finely chopped


Put the cauliflower florets into a large heavy-bottomed saucepan over a medium heat, add the vegetables stock, onion, potato and salt, mix well, bring to the boil, reduce the heat to maintain a gentle simmer and simmer until the cauliflower is soft (15-20 minutes), stirring every few minutes
Remove the soup from the heat and let it cool
Put the cooled soup mixture into a food processor and blend into a smooth soup
Heat the smooth soup in the large saucepan and bring to the boil
Add the curry powder and mix well, reduce the heat to maintain a good simmer and simmer for 3 minutes
Stir in the fresh coriander (cilantro) leaves
Serve hot
