String (French) Beans Curry Recipe

From 168 to 335 calories each serving (366 to 533 calories if eating with rice)


150g (5 oz) string (French) beans
30g (1 oz) grated (shredded) coconut
2 tablespoons (30ml) poppy seeds
2 tablespoons (30ml) vegetable oil
1 tablespoon (15ml) black mustard seeds
1 tablespoon (15ml) ground cumin
1 small onion, peeled and finely chopped
1/8 teaspoon (0.5ml) ground turmeric
1 teaspoon (5ml) salt
1 teaspoon (5ml) chilli powder


Wash the string beans, top and tail, cut into 2.5cm (1 inch) lengths and set aside
Put the coconut into a spice grinder and grind into a smooth powder
Put the coconut powder, poppy seeds and 2 tablespoons (30ml) cold water into a food processor, blend into a smooth paste and set aside (add a little more cold water if needed)
Heat the vegetable oil in a medium heavy-bottomed saucepan (you need one with a lid) over a medium to high heat
Add the black mustard seeds and ground cumin and stir-fry until the mustard seeds start to pop (30-90 seconds)
Add the onion, mix well and saute until the onion starts to brown (4-8 minutes), turning often
Add the string (French) beans, ground turmeric and salt, mix well, cover and cook until the beans are cooked (4-8 minutes), stirring often (add a little cold water if the beans get too dry, being careful as the water may splutter when added to the oil)
Add the coconut paste that you made, mix well, reduce the heat to low, cover and cook for 10 minutes, stirring every minute (add a little water if the ingredients get too dry and start to burn)
Add the chilli powder, mix well and cook (uncovered) for 2 minutes, stirring as needed
Serve hot with rice
