Lamb and Potato Burgers (Patties) Recipe

3 medium potatoes, peeled and mashed
450g (1 lb) minced (ground) lamb
1 teaspoon (5ml) allspice
1/2 teaspoon (2.5ml) turmeric
1/2 teaspoon (2.5ml) cayenne pepper
1 large red onion, peeled and finely chopped
2 tablespoons (30ml) finely chopped fresh coriander
1 tablespoon (15ml) finely chopped fresh mint
2.5cm (1 inch) fresh ginger root, peeled and grated
2 teaspoons (10ml) garlic paste
2 tablespoons (30ml) lemon juice
1 teaspoon (5ml) salt
3/4 cup breadcrumbs
1/2 cup (120ml or 4 fl oz) vegetable oil


Heat a frying pan over a medium to high heat (without any oil)
Stir-fry the minced (ground) lamb for 5 minutes, until it is browned, and set aside to cool
Once the lamb has cooled, put it in a large bowl with the allspice, turmeric, cayenne pepper, onion, coriander, mint, ginger, garlic paste, lemon juice and salt
Mix the bowl contents with your hands until it is like a smooth dough
Divide the mixture into 16 pieces and roll them into balls
Press the balls down into patties, each 1cm (1/2 inch) thick
Coat the patties with breadcrumbs
Preheat oven to 160C (320F) to keep the cooked patties hot
Heat 2 tablespoons (30ml) of vegetable oil in a frying pan over a medium heat
Cook 4 of the patties for 3 minutes on each side, until a golden colour
Put the patties on a plate with absorbent kitchen paper and dab away the excess oil
Put the cooked patties into the oven
Repeat the above cooking process (adding more oil and frying and putting into oven) until all of the patties are cooked
Serve hot
