Pork Curry Recipe - Serves 4

Pork Curry Recipe

712 calories each serving (910 calories if eating with rice)


500g (1 lb 1 oz) lean pork
3 tablespoons (45ml) cooking oil
2 large potatoes, peeled and cut into pieces of about 2.5cm (1 inch)
2 tablespoons (30ml) curry powder
2 tablespoons (30ml) ground ginger
4 large tomatoes, finely chopped
1 tin/can (400ml or 14 fl oz) coconut milk
2 teaspoons (10ml) brown/raw sugar
1 tablespoon (15ml) lime juice


Cut the pork into pieces of about 2.5cm (1 inch) square and set aside
Parboil the potatoes by boiling a saucepan of water, adding the potato and boiling for 5 minutes before draining and setting aside the potato
Heat the cooking oil in a large heavy-bottomed saucepan or frying pan over a medium heat
Add the curry powder and ground ginger to the saucepan (or frying pan), mix well and cook for 2 minutes, stirring often
Add the tomatoes, mix well and cook for 2 minutes, stirring often
Add the coconut milk and sugar and mix well
Add the pork and potatoes, mix well, bring to the boil, adjust the heat to maintain a good simmer and simmer for 20 minutes, stirring every few minutes
Make sure that the pork and potatoes are both fully cooked, cooking for longer if needed
Add the lime juice and mix well
Serve hot
