Chicken Bhuna Curry (version 3) Recipe

Ingredients

2 tablespoons (30ml) vegetable oil
1 small onion, peeled and finely chopped
1/2 teaspoon (2.5ml) ground cumin
2 teaspoons (10ml) ground coriander
1/4 teaspoon (1ml) ground turmeric
1 teaspoon (5ml) ginger paste
1 teaspoon (5ml) garlic paste
680g (1 lb 8 oz) boneless and skinless chicken thighs, cut into bite-sized pieces
3 large tomatoes, finely chopped
1 fresh green chilli, finely chopped
1 teaspoon (5ml) chilli powder
1 teaspoon (5ml) garam masala
1 teaspoon (5ml) salt
1/2 cup (125ml) fresh coriander (cilantro) leaves, finely chopped


Method

Heat the vegetable oil in a large heavy-bottomed saucepan on a medium to high heat
Add the onion, ground cumin, ground coriander, ground turmeric, ginger paste and garlic paste and mix well
Add the chicken, mix well, cover and saute for 15 minutes, turning a few times
Add the tomatoes, fresh chilli, chilli powder, garam masala and salt, mix well, bring to a good simmer, adjust the heat to maintain the simmer and simmer for 10 minutes, stirring every 2 minutes
Add the fresh coriander (cilantro) leaves and mix well
Serve hot
