Kheer (version 2) Recipe

50g (2 oz) basmati rice
6 whole cashew nuts, thinly sliced
6 whole almonds, thinly sliced
10 individual raisins
2 teaspoons (10ml) vegetable cooking oil
1L (35 fl oz) full milk
50g (2 oz) sugar
1/4 teaspoon (1ml) ground cardamom


Wash the basmati rice by rinsing under a cold tap until the water is clear and set aside
Heat the vegetable cooking oil in a large heavy-bottomed saucepan with a medium to high heat
Add the cashew slices, almond slices and raisins, mix well and stir-fry until they are golden brown and then tip onto a saucer or small plate and set aside
Add the basmati rice to the saucepan, return to the heat and stir-fry for 3 minutes
Add the full milk, mix well and bring to a gentle boil
Add the sugar and mix well so that the sugar dissolves
Reduce the heat to a simmer and simmer until the rice is cooked (10-15 minutes), stirring often
Simmer until the milk has reduced and the kheer is no longer runny
Add the ground cardamom and mix well
Sprinkle in the nuts and raisins that you fried and mix well
Serve warm
