Mexican Chili Recipe - Serves 3-4

Mexican Chili Recipe

From 323 to 431 calories each serving (521 to 629 calories if eating with rice)

2 tablespoons (30ml) chilli powder
1/4 teaspoon (1ml) garlic powder
1/8 teaspoon (0.5ml) cayenne pepper
1 teaspoon (5ml) cumin powder
2 tablespoons (30ml) oil
500g (1 lb) lean minced (ground) beef
1 teaspoon (5ml) salt
1 cup (250ml) cold water
4 tablespoons (60ml) grated cheddar cheese


Mix the chilli powder, garlic powder, cayenne pepper and cumin powder in a small bowl
Heat the oil in a large saucepan (you need one with a lid) over a medium heat
Add the beef to the saucepan
Stir and break up the beef until it is browned (about 5 minutes)
Add the spice mixture to the pan
Mix the spices well into the beef
Add the salt and water to the pan, mix well and increase the heat to bring to a good simmer
Turn the heat to low when it reaches a simmer
Put a lid onto the pan and cook for 20 minutes, stirring fairly often
Increase the heat to high and boil for 5 minutes so that the liquid evaporates a little, stirring often (remove from the heat if the liquid/sauce gets to the consistency that you want)
Remove the lid
Serve on a bed of tortilla chips and sprinkle with the cheese
