Spicy Fish Cakes Recipe - Makes 20

Ingredients
450g (1 lb) cooked white fish fillets
2 large potatoes
4 spring onions finely chopped
2 green chillis finely chopped (remove seeds first)
2.5cm (1 inch) cube of fresh ginger root, grated
2 garlic cloves finely chopped
2 tablespoons (30ml) finely chopped fresh coriander
2 eggs
Breadcrumbs
4 tablespoons (60ml) oil
Method
Peel and boil the potatoes and then mash them
Break up the fish into a bowl
Add the potato, spring onions, chillies, ginger, garlic and coriander
Add 1 of the eggs
Mix really well
Split the mixture into 20 equal size balls
Flatten the balls into cakes
Beat the 2nd egg in a bowl
Dip the fish cakes into the egg and coat with breadcrumbs
Heat the oil in a large frying pan
Fry the cakes for 2 minutes on each side
Serve hot
